Gh olive artichoke pasta

  • 350 gram(s) trottole pasta
  • 1 tablespoon(s) olive oil
  • 2  shallots, finely chopped
  • 2  peppers, deseeded and cut into bite-sized pieces
  • 1  red chilli, deseeded and finely chopped
  • 6 medium tomatoes, roughly chopped
  • 1 pinch(es) caster sugar
  • 1 teaspoon(s) dried oregano
  • 280 gram(s) jar of artichokes in oil, drained
  • 75 gram(s) black olives
  • 50 gram(s) each of butter and grated parmesan
  • 1 tablespoon(s) freshly chopped flat-leafed parsley

Method

  1. Cook the pasta according to packet instructions.
  2. Heat oil in a pan, then gently fry shallots for 4min until soft. Add next five ingredients; fry for 5min.
  3. Stir in artichokes and olives and cook for 2min to heat through. Stir in the butter, parmesan and parsley.
  4. Drain the pasta, return to pan and stir in the sauce.
