Olive, feta and watermelon salad

  • 250 gram(s) feta cheese, broken into chunks
  • 1  red chilli, deseeded and finely chopped
  • 1 clove(s) garlic, crushed
  • 100 ml (31/2fl oz) good quality extra virgin olive oil
  • 1 small watermelon, deseeded and cut into chunks
  • 200 gram(s) Greek kalamata olives, pitted
  • Juice of 2 limes
  • Finely grated zest of 1 lime

Method

  1. Place the feta cheese in a shallow salad bowl or arrange on a platter. In a separate small bowl, mix together the chilli, garlic and half of the olive oil. Season well with salt and freshly ground black pepper.
  2. Pour the olive oil mixture over the feta cheese, cover the bowl and leave to marinate at room temperature for 30 minutes until the flavours infuse.
  3. Meanwhile, put the watermelon chunks in a wide, shallow bowl. Add the feta cheese and the oil marinade to the cubed fruit. Scatter over the kalamata olives, then pour over the remaining olive oil and the lime juice and sprinkle over the grated lime zest. Lightly toss all the salad ingredients together and serve immediately.
