Ingredients

  • 700 gram(s) (1½lb) carrots, peeled and cut into thin matchsticks
  • 50 gram(s) butter
  • 50 gram(s) light muscovado sugar
  • 150 ml (¼ pint) each of orange juice and dry white wine
  • 2 tablespoon(s) balsamic vinegar
  • 2  level tbsp freshly chopped flat-leafed parsley

Method

  1. Put the carrots, butter, sugar, juice, wine and vinegar into a pan, season and bring to the boil. Reduce heat and simmer, uncovered, for 10-15min or until carrots are tender and liquid has evaporated enough to form a glaze.
  2. Keep warm until ready to serve, then scatter with parsley just before you dish up.
