Parma ham-wrapped fish with creamy leeks and peas

• 3 tablespoon(s) olive oil
• 4  leeks, chopped
• 300 gram(s) (11oz) peas
• 200 ml (7fl oz) double cream
• 50 gram(s) (2oz) Parmesan cheese (hard Italian cheese), grated
• 1 tablespoon(s) English mustard powder
• 4  fish fillets, such as whiting, weighing
• 125 gram(s) (4oz) each, skinned
• 8 slice(s) Parma ham

Method

1. In a saucepan, add 2tbsp oil and stir in leeks. Cook over a low heat for 10 mins, till beginning to soften. Add peas, stir in cream, Parmesan and mustard, and cook for 5 mins more.
2. Season fish with pepper and wrap each fillet with 2 slices Parma ham. Heat remaining oil in a nonstick frying pan to medium-high heat and cook fish for 3-4 mins on each side. Serve with leeks and peas.
