Prima low-fat desserts - Peach filo tart

  • 4  sheets filo pastry
  • 40g/11?2oz butter
  • 50g/2oz golden caster sugar
  • 200 gram(s) pack extra-light cream cheese
  • 3 tablespoon(s) light muscovado sugar
  • 1 teaspoon(s) vanilla bean paste
  • 2  fresh peaches, sliced 3tbsp apricot glaze
  • Tip: Light muscovado sugar is unrefined with a lovely natural caramel flavour. We like Billingtons, 99p for 500g.

Method

  1. Preheat oven to gas mark 5/190°C (170°C in a fan oven). Grease a bun tin. Open out filo pastry sheets and cut stack into eight equal squares. Lay one pastry square into a bun tin, lightly brush with butter and then scatter over a little sugar. Place a second piece of pastry over fi rst to form a star shape, repeat with the brushing and scattering and then top with a third and fourth piece, brushing with butter and sprinkling with sugar. Make 7 more tarts in the same way.
  2. Bake for 10 mins till they are golden brown. Allow to cool in tins.
  3. Meanwhile, mix cream cheese with muscovado sugar and vanilla bean paste.
  4. Spoon cheese mixture between tartlets and then arrange 4 peach slices on top of each tart.
  5. Warm apricot glaze in microwave for 30 secs, and then brush over peaches to glaze. Serve within 1 hr of filling.
