Ingredients

  • 50g/2oz golden caster sugar
  • finely grated zest and juice of 1 lemon
  • 75cl bottle rosé wine,chilled
  • 150ml/1?4 pint peach schnapps, chilled
  • 1  peach or nectarine, sliced
  • ice cubes
  • 1l bottle diet tonic water

Method

  1. Put sugar in a large bowl and pour on 100ml/ 4fl oz boiling water then stir to dissolve sugar. Add lemon zest and juice then set aside to cool.
  2. Stir in rosé wine and peach schnapps.
  3. Just before serving, add peach or nectarine slices and plenty of ice cubes and top up with tonic water.
