Ingredients

  • 250 gram(s) bacon lardons
  • 2  Little Gem lettuces, shredded
  • 100 ml (3½fl oz) vegetable stock
  • 225 gram(s) fresh or frozen peas
  • 2 tablespoon(s) chopped fresh parsley
  • 2 tablespoon(s) butter
  • Squeeze of lemon juice

Method

  1. Heat a non-stick frying pan until quite hot and add the lardons. Turn down the heat and cook for 3 minutes, stirring, until the fat starts to run.
  2. Add the lettuce; stir to coat in the fat. Pour in the stock, season and bring to the boil, then turn down the heat and simmer, uncovered, for 3 minutes. Add the peas and parsley. Shake the pan while it comes to the
  3. boil; add the butter. Simmer for 2 minutes, remove from the heat, then squeeze over the lemon juice before serving.
