  • 900 gram(s) Jersey Royals
  • 1 teaspoon(s) coarsely ground black pepper
  • 25 gram(s) butter
  • 75 gram(s) baby spinach leaves

Method

  1. Cook Jersey Royals in boiling water until tender. Drain, then crush lightly with a fork. Add black pepper, butter and baby spinach leaves; stir to wilt.
  2. Prepare ahead: Make the recipe up to a day ahead, omitting the spinach. Cool, cover and chill. To serve, put the potatoes into an ovenproof dish, cover and heat for 15min alongside the duck. Stir in spinach to wilt.
