Ingredients

  • 50 gram(s) fromage frais or Greek yogurt
  • 1 small handful each fresh parsley, basil and tarragon, finely chopped
  • 1 teaspoon(s) smooth mustard
  • 4  skinless chicken breasts
  • 200 gram(s) green beans
  • 200 gram(s) tenderstem broccoli
  • zest of 1 lemon (use remainder for serving as wedges)
  • 25 gram(s) toasted breadcrumbs

Method

  1. In a bowl, add fromage frais or Greek yogurt and stir in herbs and mustard. Stir in 2tbsp of hot water to thin slightly, so it's easy to drizzle. Season and set aside.
  2. In a pan of boiling water, add chicken, then reduce to a simmer and cook for about 15 mins, till chicken is cooked through. In another pan of boiling, salted water, cook green beans and broccoli till tender. Drain and put in a large bowl. Stir through lemon zest. Remove chicken from water and slice, then add to vegetables. Drizzle dressing over chicken and veg and toss together. Sprinkle with breadcrumbs and serve with lemon wedges.
