Ingredients

  • 6  pears, peeled, leaving stalk intact - Williams variety is good
  • juice of 1 lemon (this is to stop discoloration)
  • 1  vanilla pod, split
  • 1 tablespoon(s) caster sugar
  • For the sauce
  • 350 gram(s) (12oz) dark chocolate, broken into small pieces (use one with a cocoa content of at least 42%)
  • 8 tablespoon(s) water
  • 2 tablespoon(s) golden syrup
  • 10 gram(s) (½oz) butter
  • 1  cardamom pod, crushed

Method

  1. In a large saucepan, sit pears in neatly, then cover with water and lemon juice. Add the vanilla pod and sugar and bring to a gentle simmer. Cook for about 40 mins, till pears are soft. Pierce the underside of a pear to check, then carefully lift the pears out of the water with a slotted spoon and pop to one side to cool. Keep in the fridge if making a day ahead.
  2. In a saucepan, add the chocolate, water, syrup, butter and cardamom pod. Melt over a low heat, stirring all the time. When it's all melted, remove from heat and pop to one side. You can reheat this when required - it will be lovely and glossy. Remove the cardamom pod before serving.
  3. To serve, plate up a cold pear and pour over the hot sauce.
