Pork and Miso Noodle Soup

• 1 tablespoon(s) vegetable oil
• 400 gram(s) pork fillet, cut into finger-size strips
• 100 gram(s) (3½oz) mange tout, halved
• 4cm (1½in) fresh ginger, peeled and finely grated
• 1  orange pepper, deseeded and finely sliced
• 1 tablespoon(s) miso paste
• 150 gram(s) rice or egg noodles
• A few drops Tabasco sauce
• 3  spring onions, finely sliced
• 1 large handful fresh coriander, roughly chopped

Method

1. Heat oil in a large pan or wok over high heat. Add the pork and cook for 5min, stirring, until golden. Add mange tout, ginger and pepper. Cook for 3min or until vegetables are soft.
2. Stir in the miso, noodles and 1 litre (1¾ pints) water. Bring to the boil and simmer for 2min. Add the Tabasco, check the seasoning, then divide among four bowls. Garnish with spring onions and coriander and serve immediately.
