Pork Stir-fry with Chilli and Mango

• 75 gram(s) medium egg noodles
• 1 teaspoon(s) groundnut oil
• ½ red chilli, deseeded and finely chopped
• 125 gram(s) pork stir-fry strips
• 1 head(s) pak choi, roughly chopped
• 1 tablespoon(s) soy sauce
• ½ ripe mango, sliced

Method

1. Cook the noodles according to packet instructions.
2. Meanwhile, put the groundnut oil into a wok or large frying pan and heat until very hot. Add the chilli and pork strips and stir-fry for 3-4min.
3. Add the pak choi and soy sauce then cook for a further 2-3min.
4. Add the mango and toss to combine. Drain the noodles and add to the pan, then warm through and serve.
