2 medium potatoes
1 small onion
200ml (7fl oz) hot chicken stock
4tbsp passata
4 chopped anchovies

Preheat the overn to 200°C (180°C fan) mark 6. Grease a small (15cm x 25.5cm/6in x 10in) ovenproof dish with a little butter. Thinly slice 2 medium potatoes and 1 small onion. Put half the potatoes in a thin layer in the dish, sprinkle over the sliced onion, then top with the remaining potatoes. Pour over 200ml (7fl oz) hot chicken stock, season, cover with foil and cook in the oven for 50min. Mix 4tbsp passata with 4 chopped anchovies, then spoon over the potatoes. Re-cover with the foil and continue to cook for 10min. Serve with the lamb. cals, 1g fat (trace saturates), 27g carbohydrate (10.5g total sugars) per serving; serves 2
