Prawn and rice noodle spoons

• 250 gram(s) thin rice noodles
• 2 tablespoon(s) sweet chilli sauce
• ¼tsp fish sauce
• Grated zest and juice of 1 lime
• 1  red chilli, deseeded and finely chopped
• 1 tablespoon(s) chopped fresh coriander
• 1 tablespoon(s) finely chopped fresh Thai basil (optional)
• 6 tablespoon(s) sunflower oil
• 20  cooked, peeled tiger prawns, roughly chopped

Method

1. Prepare the noodles according to packet instructions, then cool in iced water for 5 minutes. Drain, transfer to a bowl and add the chilli sauce, fish sauce, lime zest and juice, chilli, coriander, basil (if using), oil and prawns. Stir to mix well.
2. Divide the noodle mixture into 20 portions. Twirl each portion around a fork to make a 'nest', transfer them to 20 Chinese-style spoons and serve immediately.
