DARK CHOCOLATE TRUFFLES RECIPE

300g white chocolate
25g butter
180ml double cream
1 tablespoon raspberry liqueur

Break up the chocolate and place in a bowl with the butter. Bring the cream to the boil in a pan and pour over the chocolate and butter. Leave to melt, then stir until smooth and allow to cool.
Using an electric beater, whisk the mixture until fluffy and slightly lighter in colour. Whisk in the liqueur.
Chill until firm. Take a teaspoon of mixture and form into a ball. Roll in icing sugar, desiccated coconut or white sugar balls. Place in paper cases. Store in the fridge and eat within three days.
