Quick cherry tomato sauce

• 2 tablespoon(s) olive oil
• 2  shallots, finely copped
• 1  garlic clove, crushed
• 400 gram(s) cherry tomatoes, halved
• 50 gram(s) (2ox) sunblush tomatoes, chopped
• 2 teaspoon(s) balsamic vinegar
• 1 pinch(es) sugar

Method

1. Heat 2tbsp olive oil in a pan. Add 2 finely chopped shallots and fry gently for 5min until softened. Stir in 1 crushed garlic clove and cook for a further 1min.
2. Add 400g (14oz) halved cherry tomatoes and 50g (2oz) chopped sunblush tomatoes . Continue cooking for 5-10min until softened. Stir in 2tsp balsamic vinegar and a pinch of sugar. Season. Serve at room temperature.
3. Get ahead Make the tomato sauce up to two days ahead. Cover and chill.
