1 x 25g hollandaise sauce mix
250ml (9 floz) milk
25g (1oz) butter
8 eggs
4 English muffins, split
150g (5oz) thinly-sliced ham

Make up the sauce mix with the milk and butter, following packet instructions.
Break 4 eggs into separate cups, then gently tip each one into a large pan of boiling water. Reduce the heat and poach for 2-2 ½ mins.
Lift eggs out and into a bowl of warm water to keep them hot while you cook the remaining eggs in the same way.
Lightly toast the muffins, then pile the ham on top. Lift the eggs out of the water, placing one on each muffin half. Spoon the hollandaise sauce all over and garnish with chives.
