Quick falafel pittas

• 2  x 410g cans chickpeas, drained and rinsed
• 25 gram(s) pack parsley 1tsp cumin
• juice of ½ lemon
• 1 clove(s) garlic, crushed
• 1  egg yolk
• 1 tablespoon(s) oil, for greasing
• For the dressing
• ¼ cucumber, grated
• 1 clove(s) garlic, crushed
• 100g/3½oz low-fat yogurt
• 4  wholemeal pittas
• 3  tomatoes, sliced
• ½ red onion, sliced
• 1  round lettuce

Method

1. Preheat oven to gas mark 5/190°C (180ºC in a fan oven). In a food processor, whizz chickpeas, parsley, cumin, lemon juice, garlic, egg yolk, a pinch of sea salt and some freshly ground black pepper, till smooth. Form into 8 patties, then sit them on an oiled baking sheet and bake for 15 mins.
2. Mix together grated cucumber and garlic with yogurt in a small bowl. Lightly warm pittas, then stuff with falafels, tomato, red onion and lettuce and drizzle over yogurt mixture.
