  • 500 gram(s) (1lb 2oz) red onions, halved and thinly sliced
  • 2 tablespoon(s) fresh thyme leaves
  • 500 gram(s) (1lb 2oz) puff pastry
  • 100 gram(s) (31/2oz) goat's cheese
  • 40 gram(s) (11/2oz) canned black olives, sliced

Method

  1. Preheat oven to 220°C/200°C fan/Gas 7. Heat 4tbsp of olive oil in a large, non-stick frying pan, add the onions and cook over a gentle heat for 12-15 minutes. Add the thyme leaves, season well and remove from the heat.
  2. Meanwhile, roll out the pastry on a lightly floured surface and cut into a 23cm x 18cm (9in x 7in) rectangle. Transfer the pastry square onto a large baking sheet.
  3. Spread the onion mixture over the pastry in an even layer up to 11/2cm (1/2in) away from the edge. Crumble over the goat's cheese and sprinkle over the olives. Bake for 20-25 minutes, or until the pastry has risen and is lightly golden. Serve warm or at room temperature with a fresh tomato salad.
