Red pepper rice

• 280 gram(s) jar chargrilled peppers, drained and roughly chopped (reserve 3tbsp oil)
• 6  spring onions, finely sliced
• 1 clove(s) garlic, crushed
• Half teaspoon(s) hot smoked paprika
• 1  red pepper, deseeded and chopped
• 1 small bunch mint, leaves chopped
• 1 small bunch flat-leaf parsley, chopped
• 175 gram(s) (6oz) basmati rice, cooked, drained and cooled
• juice of 1 lemon

Method

1. In a bowl, add chargrilled peppers along with reserved oil. Stir in onions, garlic, paprika, fresh pepper, half herbs and season well.
2. Stir to combine and leave for 10 mins to allow flavours to develop. Add rice, remaining herbs and lemon juice to taste.
