Ingredients

  • 250 gram(s) tub ricotta
  • 2  x 20.5cm/8in pizza bases
  • 12  plum tomatoes, cut into wedges
  • 1 pinch(es) chilli flakes (optional)
  • 1 handful fresh basil leaves, torn
  • extra-virgin olive oil or chilli oil, to serve

Method

  1. Preheat oven to gas mark 6/200ºC (190ºC in a fan oven). Season ricotta with sea salt and freshly ground black pepper, then spread over pizza bases. Top with tomato wedges, then sprinkle with chilli flakes, if using. Pop in the oven for 10-15 mins, till tomatoes are softened. Scatter with torn basil and drizzle with a little extra-virgin olive oil or chilli oil before serving.
