Roast Chicken with Couscous

• 250 gram(s) couscous
• 400 ml hot chicken stock
• 4 tablespoon(s) extra virgin olive oil
• Juice of 1/2 orange
• 1 large carrot, grated
• 2 medium courgettes, grated
• 2 tablespoon(s) each fi nely chopped mint and fl at-leafed parsley
• 50 gram(s) pinenuts, toasted
• 1 whole(s) roast chicken, sliced

Method

1. Put the couscous and hot stock into a bowl. Soak, following packet instructions.
2. In another bowl, mix together the olive oil and orange juice.
3. When the couscous is ready, fluff up with a fork, then stir through the carrot, courgette, herbs, pinenuts and olive oil dressing. Season. Serve with the chicken.
4. Cook's Tip If you can't buy a ready-roasted chicken, serve the couscous with any cold cured meat.
