  • 3 tablespoon(s) olive oil
  • 250 gram(s) (9oz) parsnips, peeled and cut into lengths
  • 250 gram(s) (9oz) carrots, peeled and cut into lengths
  • 4  pink-skinned eating apples, cut into quarters and cored

Method

  1. Preheat oven to gas mark 6/200ºC (190ºC in a fan oven). In a large roasting tin, add oil then parsnips and carrots, and combine. Cook for about 20 mins, till golden, then remove from oven and toss in apple. Cook for a further 10 mins.
