Roast sweet potato and red onion soup

• 500 gram(s) sweet potatoes, peeled and roughly chopped
• 1  red onion,chopped
• 2 tablespoon(s) olive oil
• 2 teaspoon(s) ground cumin
• 1 liter(s) vegetable stock
• 1 tablespoon(s) tomato
• purée
• 4 tablespoon(s) natural yogurt, to serve

Method

1. Preheat oven to gas mark 7/220°C (200°C) in a fan oven. Put potatoes and red onion in a roasting tin and drizzle over olive oil. Sprinkle with cumin and plenty of salt and freshly ground black pepper.
2. Roast potatoes and onion for 20 mins, till tender and golden.
3. Blend potatoes and onion with hot stock and tomato purée in batches till smooth. Put in a pan and warm through to serve. Add a dollop of yogurt on top.
