Ingredients

  • 1.2 kilogram(s) banana shallots, or small red onions
  • 3 small semi-mature hard goat's cheeses
  • 50 gram(s) unsalted butter, plus extra to serve
  • 50 gram(s) flaked almonds
  • cayenne pepper
  • a generous squeeze of lemon juice
  • coarse textured bread to serve

Method

  1. Heat the oven to 220C/200C fan oven/gas mark 8. Arrange the shallots or onions in a baking or roasting dish, and bake for 50 minutes.
  2. About 15 minutes before the end of cooking, place the goat's cheeses in a shallow baking or roasting dish. Gently melt the butter in a small saucepan, then add the almonds and stir, and season with cayenne pepper and a generous squeeze of lemon juice. Spoon this over and around the goats' cheeses. Cook for 10-12 minutes until the almonds are golden, the cheese should retain its shape while being soft and melted inside.
  3. When the onions are cooked, slit them open and dab with butter, and eat together with the toasted goat's cheese and some bread.
