Ingredients

  • 350 gram(s) new potatoes
  • salt and ground black pepper
  • 450 gram(s) (1lb) cod fillets
  • 350 gram(s) jar tomato pasta sauce
  • 150 gram(s) button mushrooms
  • 50 gram(s) pitted black olives
  • 3 tablespoon(s) freshly grated Parmesan cheese
  • 2 tablespoon(s) chopped basil, plus sprigs to garnish

Method

  1. Cook the scrubbed new potatoes in a large pan of boiling, salted water for 20min or until tender. Drain and set aside.
  2. Cut the cod fillets into chunks. Put the tomato sauce into a frying pan with the sliced mushrooms and 50ml (2fl oz) water. Bring the mixture to the boil and allow to bubble for 1-2min.
  3. Transfer the mixture to an ovenproof dish, add the olives and halved potatoes then arrange the fish on top. Season with pepper and sprinkle with Parmesan cheese. Cook at 200°C (400°F) mark 6 for 10-15min or until the fish is cooked. Sprinkle with chopped basil, then garnish with basil sprigs before serving.
  4. COOK'S TIP Fish is quick to cook and makes an ideal supper. Instead of cod, you could use any other white-fleshed fish such as monkfish, brill or halibut.
