700g/1lb 8oz potatoes, cut into chunks butter, to grease
6 tablespoon(s) freshly grated Parmesan cheese
300 gram(s) carton fresh-cheese sauce
1 tablespoon(s) wholegrain mustard
3 eggs, separated

Boil chunks of potatoes in cold salted water for 20 mins or till tender. Drain, return to pan and mash. Preheat oven to gas mark 6/200?C (180?C fan oven). Butter 6 x 250ml/8fl oz ramekins, sprinkle each one with 1tbsp Parmesan and put on a baking sheet.
Add cheese sauce, mustard and egg yolks to potato. Season well with salt and freshly ground black pepper and beat together.
In a clean grease-free bowl, whisk egg whites till they stand in stiff peaks, then fold into mashed potato. Spoon into prepared dishes and bake for 30 mins till well risen. Serve immediately.
