She Courgette mint and mozzarella salad

Ingredients

  • 400 gram(s) plum tomatoes
  • 4  garlic cloves, thinly sliced
  • 4 tablespoon(s) olive oil
  • 1-2tbsp capers, drained
  • 1 small red onion, thinly sliced

Method

  1. Preheat the oven to 200ºC/180ºC fan/Gas 6. Cut tomatoes in half lengthways and place, cut side up, on a non-stick baking sheet. Scatter over garlic and seasoning. Drizzle with oil and bake for 12-15 minutes. Transfer to a platter and scatter over the capers and onion. Serve at room temperature.
