450 gram(s) (1lb) watermelon, cubed
1 tablespoon(s) rosewater
2 teaspoon(s) orange liqueur (optional)
4 teaspoon(s) caster sugar
50 gram(s) (2oz) shelled pistachio nuts

Put watermelon in a large bowl, drizzle over rosewater and liqueur, if using, and leave to infuse.
In a nonstick frying pan over a medium heat, add sugar and heat till it melts and turns golden. This will take about 2 mins. Immediately add pistachios, mix briefly, then remove from heat. Ensure each nut is coated, then tip onto a plate and leave to cool for a few mins before breaking up with your hands. Serve watermelon and juice scattered with pistachios.
