50 gram(s) butter
125 gram(s) golden caster sugar
finely grated zest and juice of 2 lemons (or 1 lemon and lime)
2 medium eggs, separated
40 gram(s) self-raising flour
300 ml full-fat milk
1 tablespoon(s) icing sugar

Preheat oven to gas mark 4/180°C (160°C in a fan oven). Grease 4 x 200ml/7fl oz ovenproof dishes. Put butter, sugar and lemon zest into a bowl and cream together till light and fluffy. Gradually whisk in egg yolks, then fold in fl our. Stir in milk and the lemon juice.
Whisk egg whites till softly peaking, and gently fold into mixture. Spoon into greased dishes. Stand dishes in a roasting tin and pour on boiling water to come half way up sides. Bake for 25 mins till top is golden. Dust with icing sugar to serve.
