Ingredients

  • 125 gram(s) brown rice
  • 1 teaspoon(s) olive oil
  • 1 small onion, sliced
  • 1  pepper, sliced
  • 2  x 100g (3½oz) pork tenderloin
  • 2 tablespoon(s) sultanas
  • 125 ml each orange juice and hot chicken stock
  • 200 gram(s) broccoli
  • 50 gram(s) each baby leaf spinach and rocket

Method

  1. Put the brown rice into a small pan with 250ml (9fl oz) boiling water. Cover, bring to the boil, then turn down the heat to the lowest setting and cook according to the timings on the pack.
  2. Meanwhile, heat the oil in a pan and add the sliced onion and pepper. Add 1tbsp water and cook for 5- 10min.
  3. Add the pork and fry for 3-4min until golden. Add the sultanas, orange juice and stock. Bring to the boil, then simmer, part-covered, for 10min until the pork is cooked.
  4. Steam the broccoli until just tender. Slice each pork tenderloin into three or four pieces. Divide the rice between two plates, then add the spinach and rocket. Top with the pork and drizzle with sauce.
