Ingredients

  • 50 gram(s) sliced white bread, crusts trimmed off
  • 250 gram(s) smoked cod's roe, skinned and roughly chopped
  • 250 ml extra virgin olive oil
  • Juice of 2 large lemons

Method

  1. Break the bread into small pieces, place in a food processor with the cod's roe and blend, gradually pouring in the olive oil. Add the lemon juice and 75ml (3fl oz) warm water and blend until smooth.
  2. Transfer the mixture to a shallow bowl and chill. To serve, arrange on a platter with the other mezze dishes.
