Slow-cooked chicken with white wine

• 1 small knob butter
• 1 tablespoon(s) olive oil
• 4  or 8 chicken thighs, depending on size
• 4 clove(s) garlic
• few sprigs fresh thyme
• 1 large wine glass white wine
• 1 large wine glass chicken stock

Method

1. Melt butter with oil in a casserole dish. Brown chicken, skin-side down, for 5 mins. Flatten garlic with flat side of knife and remove skin but don't chop. Turn chicken over and add garlic, thyme and seasoning to dish. Season. Cover and cook gently for 30 mins.
2. Remove chicken and drain off as much fat as possible while keeping chicken juices. Return dish to heat, whisk in wine, then stock, and bubble for a few mins. Pour over chicken before serving.
