Smoked salmon and spinach pasta

• 500 gram(s) pasta (I prefer tagliatelle)
• 1  onion, finely chopped
• 100 gram(s) mushrooms
• 1 bag(s) spinach, washed
• 4 tablespoon(s) cream or cooking liquid from pasta
• 100 gram(s) smoked salmon - trimmings are ideal for this dish
• fresh parsley or tarragon, to garnish (optional)

Method

1. Microwave onion on high for three minutes in a large bowl.
2. Add chopped or sliced mushrooms, cover and cook for a further two minutes.
3. Add the washed spinach and cook a further two minutes. Add cream or cooking liquid and blitz together in a blender until smooth.
4. Meanwhile cook the pasta according to package intructions, drain and keep warm. Add sauce ingredients and smoked salmon, toss well together and garnish with herbs if liked
5. Cook's tip The sauce ingredients can be cooked on the hob if preferred; the onion should be fried in a little olive oil until translucent.
