Soya bean, pea and basil soup

• 200 gram(s) (7oz) frozen soya beans
• 200 gram(s) (7oz) frozen peas
• 600 ml (1 pint) hot vegetable stock
• 6  spring onions, trimmed and chopped
• 1 small bunch basil leaves
• 1 handful (50g/2oz) rocket leaves
• 300 ml (10fl oz) light soya milk

Method

1. Put soya beans, peas, vegetable stock and spring onions in a pan. Bring to the boil and simmer for 5 mins.
2. Add basil and rocket leaves, and soya milk. Blend half of mixture till smooth - but leave other half chunky. Combine and warm through to serve.
3. TIP Look out for Alpro Soya Light - unsweetened soya milk that is a dairy-free alternative to milk.
