Soya bean salad

• 480 gram(s) bag of frozen soya beans 350g/12oz fine beans, trimmed and halved
• 125 gram(s) shallots, chopped
• 100 ml Greek olive oil
• 4 tablespoon(s) fresh lemon juice
• 1 teaspoon(s) Dijon mustard
• 125 gram(s) Kalamata green olives with red peppers
• 2 tablespoon(s) flat-leaf parsley, chopped
• 8  green chilli peppers, drained (we used Delicias, £1.49 for 280g from Sainsbury's)

Method

1. Bring a large pan of salted water to the boil. Add soya beans and cook for 4 mins, then drain, reserving water. Next, boil fine beans for 3 mins till just tender. Drain, and refresh both in cold running water. Tip into a large bowl.
2. Gently fry shallots in 1tbsp oil for a few mins, to soften. Add remaining olive oil, lemon juice and mustard to the pan, stir to combine, then pour over beans. Stir in olives with red peppers and parsley. Chill till needed. Serve topped with chilli peppers.
