Spaghetti with courgettes and Parmesan

• drizzle of olive oil
• 3-4 courgettes, finely chopped
• 1 pinch(es) chilli flakes (optional)
• 350g/12oz spaghetti 75g/3oz
• fresh Parmesan, finely grated and some shaved for topping
• drizzle chilli oil (optional)

Method

1. In a large frying pan, heat olive oil, then add courgettes, a pinch of sea salt, some freshly ground black pepper and a pinch of chilli flakes, if using. Cook till courgettes are beginning to soften and some are beginning to char very slightly.
2. While that's cooking, in a large pan of boiling salted water, cook spaghetti as per pack instructions, drain and return to pan with a little of the cooking water.
3. Tip courgette mixture in with pasta and stir, then add grated Parmesan and give it another stir. Serve topped with the Parmesan shavings. Drizzle with some chilli oil, if you wish.
