Ingredients

  • 50 gram(s) butter
  • 4 tablespoon(s) caster sugar
  • 600 gram(s) (1lb 5oz) pineapple flesh, cut into bite-sized pieces
  • 2-3 star anise
  • 1 stick(s) cinnamon
  • 2-3tbsp dark rum
  • Cream or ice cream, to serve

Method

  1. Heat the butter in a large frying pan until it starts to foam. Add the sugar, pineapple pieces, star anise and cinnamon stick and stir for 5-6 minutes over a high heat or until the sugar mixture starts to caramelise.
  2. Add the rum and stir to mix well. Cook for 1-2 minutes more, then remove from the heat and serve immediately with a dollop of cream or ice cream.
