Spiced carrot and lentil soup

• 1 tablespoon(s) groundnut oil
• 1tbspcurry paste
• 1  onion, finely chopped
• 2 large carrots, finely chopped
• 150g/5oz red lentils
• 1  litre/13/4 pint vegetable stock
• 1  lime, cut into wedges
• fresh coriander leaves

Method

1. Heat oil in a large pan, add curry paste and fry for 1 min, then stir in onion and cook for 3 mins, to soften. Add carrots and cook for 3 more mins, stirring from time to time.
2. Stir in lentils and stock. Simmer for 15 mins, till lentils are tender.
3. Blend till smooth. Serve with a wedge of lime (squeeze in juice to taste) and some fresh coriander.
4. TIP: If you like your food fiery, add another 1tbsp curry paste.
