Ingredients

  • 400g  unsalted and unroasted nuts
  • Half  level tsp sea salt
  • generous pinch  black pepper
  • 2 tablespoon(s) olive oil
  • Half  level tsp cayenne pepper
  • Half  level tsp ground cinnamon

Method

  1. Preheat oven to 190°C (170°C fan) mark 5. Take 400g unsalted and unroasted nuts (a mixture of brazil nuts, almonds and pecans) and put them into a roasting tin. Sprinkle over 1?2 level tsp each of cayenne pepper, ground cinnamon and sea salt, a generous pinch of black pepper and 2tbsp of golden caster sugar . Drizzle over 2tbsp olive oil , stir to mix, then spread out in a single layer. Bake for 15-20min until golden and crisp. Cool in the tin and store in an airtight container for up to two weeks.
