  • 6  chicken drumsticks, skinned
  • 2 tablespoon(s) malt vinegar
  • 2 clove(s) garlic, crushed
  • 2 tablespoon(s) chicken seasoning
  • 2 tablespoon(s) ground coriander
  • 2 tablespoon(s) paprika
  • 1 teaspoon(s) dried mixed herbs
  • 75 gram(s) (3oz) plain flour vegetable oil, for frying

Method

  1. Put drumsticks in a shallow dish and pierce each several times with a sharp knife. Pour over vinegar and coat drumsticks well.
  2. Sprinkle with garlic, 1tbsp each of chicken seasoning, coriander and paprika and all mixed herbs. Stir to coat drumsticks. Cover and chill for several hours, preferably overnight.
  3. Half-fill a pan or deep fat fryer with oil and heat to 170°C. Preheat oven to gas mark 4/180°C (160°C in a fan oven). Put rest of chicken seasoning, coriander and paprika in a clean shallow dish with flour. Season with freshly ground black pepper. Roll drumsticks in flour to coat. 4 Fry drumsticks 3 at a time for 10 mins, till golden brown, then put all in a roasting tin and bake for 15 mins in oven.
