Spinach, Avocado and Bacon Salad with Mustard Dressing

• 1  level tbsp wholegrain mustard
• Juice of 1?2 lemon
• 6 tablespoon(s) extra-virgin olive oil
• 12  smoked streaky bacon rashers
• 200 gram(s) baby leaf spinach, washed and ready to use
• 1 large ripe avocado, quartered, peeled and sliced

Method

1. To make the dressing, put the mustard, lemon juice and olive oil in a small bowl and whisk together. Season with salt and freshly ground black pepper.
2. Preheat the grill. Lay the bacon rashers on a wire rack in a grill pan, then grill for 4-5min until golden and crisp. Drain on kitchen paper, cool, then snip into pieces with scissors.
3. Tip the spinach into a large bowl. Scatter the bacon and avocado slices on top, then drizzle the mustard dressing over. Carefully toss everything together.
