  • 200 gram(s) bag baby leaf spinach, washed
  • 250 gram(s) (9oz) St Agur cheese or dolcelatte, sliced
  • 1 bulb(s) fennel, washed and sliced
  • 50 gram(s) (2oz) pecans
  • 6 tablespoon(s) olive oil
  • juice of 1 small orange
  • 1 tablespoon(s) wholegrain mustard

Method

  1. Arrange spinach, cheese and fennel in 6 salad bowls then scatter over pecans. Season generously.
  2. Whisk together oil, orange juice and mustard. Drizzle over salad to serve.
