Steak and onion toasted sandwich

• 2 tablespoon(s) olive oil
• 50 gram(s) (2oz) butter
• 2  onions peeled and sliced
• 150-200g/5-7oz steak (we used rib eye)
• 1-2tbsp grainy mustard
• ciabatta roll, cut sides toasted

Method

1. In a frying pan, heat oil and butter over a low heat. Add onions and stir to coat. Cook for 15-20 mins, stirring occasionally, till browned and caramelised.
2. Season steak on both sides. Remove onions from pan, turn up heat to high and add steak, cooking on both sides for 4-5 mins (or more if you prefer it well done). Remove steak and rest for 2 mins, while you return onions to pan with grainy mustard and heat through. Pile onions onto ciabatta roll, slice steak and set on top of onions.
