Steamed Tenderstem Broccoli with Lemon and Chilli

• 600 gram(s) tenderstem broccoli, trimmed
• 3 tablespoon(s) extra virgin olive oil
• 2  garlic cloves, sliced
• Zest and 1tbsp juice of
• 1 small lemon
• 1 small pinch of chilli flakes

Method

1. Put the broccoli in a steamer basket or colander over a pan of simmering water. Season, then cover. Steam for 7-8min until just tender.
2. Meanwhile, heat the oil in a small pan and fry the garlic and lemon zest for 1min. Take pan off heat and add the lemon juice and the chilli flakes.
3. Toss the broccoli in the flavoured oil and serve.
4. Get ahead... Make the lemon and chilli flavoured oil the day before. Steam the broccoli for 5min, cool and refrigerate. To use, steam the part-cooked broccoli for 2-3min, toss with the flavoured oil and serve.
