Sticky pork with broccoli and beetroot

• 1 head(s) broccoli, broken into small florets
• 2 tablespoon(s) runny honey
• 2 tablespoon(s) sherry
• 2 tablespoon(s) soy sauce
• 1 tablespoon(s) sunflower or groundnut oil
• 300g/11oz pork strips for stir-frying
• 4  vacuum-packed natural beetroot, quartered
• chilli flakes (optional)
• 1 small bunch fresh coriander, chopped

Method

1. In a pan of boiling water, cook broccoli till just tender, drain and set aside. In a small bowl, whisk togther honey, sherry and soy sauce and set aside.
2. Heat oil in a wok or large frying pan. When really hot, add pork and stir-fry till just cooked through. Pour in sauce and bubble till it starts to thicken. Add broccoli and beetroot to pan. Sprinkle with chilli flakes before serving, if using, and chopped coriander. Serve with rice.
