Stuffed apples

• 3 slices bread
• 125g/4oz dried figs, finely chopped
• 2tbsp demerara sugar
• zest and juice of 1 orange
• 6 cooking apples

Method

1. Preheat oven to gas mark 5/190°C (170°C in a fan oven). Add bread to a food processor and whizz to crumbs, then add figs, sugar and orange zest and pulse a few times. Stir through orange juice and put to one side.
2. Core apples, trying not to go right through, then slice across top to make lid. Sit in muffin tin then divide mixture between apples. Put lid on each apple, place in muffin tin, loosely cover tin with foil and put in oven.
3. Bake for about 20-30 mins, depending on softness required. Remove foil for last 5 mins or so if you wish. Remove from oven and leave to cool for a few mins before removing from tin. Serve with a dollop of crème fraîche.
