Ingredients

  • 400 gram(s) pork fillet, sliced
  • 2 tablespoon(s) soy sauce
  • 2 tablespoon(s) sweet chilli sauce
  • 1 clove(s) garlic, crushed
  • 250 gram(s) stir-fry rice noodles
  • For the pickle:
  • 1  cucumber, peeled, halved lengthways, seeds scooped out, and thinly sliced
  • juice of ½ lemon
  • 1  red chilli, deseeded and finely sliced
  • 2.5cm/1in fresh ginger, grated
  • 1 small handful fresh mint, finely chopped
  • 1 small handful fresh coriander, finely chopped

Method

  1. In a dish, add pork fillet, soy sauce, sweet chilli sauce and garlic. Mix well, then set aside to marinate for 30 mins.
  2. In another bowl, add cucumber, lemon juice, chilli, ginger and herbs. Season to taste with caster sugar. Set aside to allow flavours to develop.
  3. Preheat oven to gas mark 6/200°C (190°C in a fan oven). Transfer pork to a roasting tin and cook for about 10-15 mins, till cooked through. Meanwhile, soften noodles in boiling water, then drain and serve with pork and cucumber salad.
