  • 1 kilogram(s) (2lb 4oz) sweet potatoes
  • 2 tablespoon(s) each olive oil and freshly chopped flat-leafed parsley

Method

  1. Cut the potatoes lengthways into fat chips and put into a large bowl. Add the oil and 1tbsp parsley. Toss to coat evenly.
  2. Cook the sweet potato chips around the edges of the barbecue grill for 20-25min, turning occasionally, until tender and golden. Add remaining parsley and toss.
