Gh sweet and sour pork

Ingredients

  • 2 tablespoon(s) vegetable oil
  • 350 gram(s) pork fillet, cut into finger-size pieces
  • 1  red onion, finely sliced
  • 1  red pepper, deseeded and finely sliced
  • 2  carrots, cut into thin strips
  • 3 tablespoon(s) sweet chilli sauce
  • 1 tablespoon(s) white wine vinegar
  • 220 gram(s) tin pineapple slices, roughly chopped, with 2tbsp juice reserved
  • 1 large handful beansprouts
  • Half tablespoon(s) sesame seeds
  • 1 large handful fresh coriander, roughly chopped

Method

  1. Heat oil over a high heat in a large frying pan or wok. Add pork, onion, pepper and carrots and cook for 3-5min, stirring frequently, until meat is cooked through and vegetables are softening.
  2. Stir sweet chilli sauce, vinegar and reserved pineapple juice into wok or pan. Bring to the boil, then stir in pineapple chunks and beansprouts and heat through.
  3. Check the seasoning. Scatter over sesame seeds and coriander and serve immediately with cooked long- grain rice.
